: Shodhganga: Dietetics and culinary art in ancient and medieval IndiaAtyamla (अत्यम्�) refers to one of the five types of “curds� (dadhi) according to the 17th century Bhojanakutūhala (ⲹṇāgṇa-첹ٳԲ), and is commonly found in literature dealing with the topics of dietetics and culinary art, also known as 첹śٰ or 첹첹.—I 岹-첹ṇa, author classifies the curds into five types [viz., Atyamla] depending on their stages of fermentaion as well as taste.
